Watermelon Mint Salad

This refreshing side dish has become a true crowd favorite and my go-to for BBQs all summer long. The hydrating watermelon & cucumber paired with the salty feta & kick of the onion are unbeatable! Try it with anything off the grill, and be sure to save some for yourself at home – you won’t have leftovers!

Ingredients

  • ~15 cups or 1/2 of a large watermelon, cubed

  • 1 cucumber, sliced into half moons

  • 1 cup red onion, thinly sliced

  • 1 cup feta cheese

  • 1 cup mint leaves, chopped

Instructions

  1. Fill your serving bowl 3/4 full with watermelon

  2. Top with the cucumber, red onion, feta, and mint. (I rarely measure these ingredients and will simply prepare enough cucumber, onion, mint, and feta to cover 1/4 of the watermelon with each topping.)

  3. Mix once ready to serve and enjoy!
